what would a good project i could do with a pinhole camera?

It sounds like you are looking for a science project, rather than an art project?
You could test how the sharpness of the image changes depending on the diameter of the pinhole. The independent variable is the diameter of the pinhole, and the dependent variable is the sharpness of the image. But you might have a problem because it's hard to objectively measure sharpness.
You could make a bunch of different cameras with different distances between the pinhole and the film/paper, and then photograph the same object at the same distance with each one, and measure the size of the object in the image.

I don't really understand your question but out of my experience with pinhole cameras, I would say experiment a lot. A whole freaking lot. Different lighting types, indoors, outdoors, shade, direct lighting, people, no people, movement, no movement.. that sort of thing.
