heres a good website.
picnik.com
its a free photo editing web site.
just upload ur pix there and try experimenting diff effects.
coz i know u could use a black&white brush. Its like everywhere u skim ur brush on turms black and white but leaves the rest of the pic colored.

Your camera may have a 'Colour accent' setting. Just choose the colour you want to stand out against the black and white and then take your pictures. I have a Cannon powershot with this setting! It's really neat!
Other wise you can try picnik. Go to effects and choose the black and white effcet and turn the whole picture black and white then press 'reverse' or something like that and drag your mouse over the areas that you want to be coloured again.
You can also try on photoshop or even paint if you're determined.
For MS Paint, make two copies of the photo, turn one black and white and one still in colour (make sure they are EXACTLY the same otherwise) and then cut out the parts you want to be in colour from the cloured image (example, eyes.) by using the select box and dragging it over to the side or where ever. Then go all around the object with the erase brush to make a white background behind it, make sure to cut out the unwanted areas and copy and paste it to the black and white photo. At the left hand side click the little thing with the shapes below the toolbox to make it have a transparent background and drag it over where it should be in the photo! Lots of work but its kinda neat :P
Hope this helps!

i find that the absolute easiest way to do this is in photoshop. duplicate the background layer (which is the original photo). Turn the background copy layer black and white, and use the eraser tool to erase away the areas of the photo you want to be in color.

It's done in photoshop with the history brush.
