What do you do when you're not photographing a wedding?

I do portraits for a studio.Proms and other events, family portraits, etc.

When I'm not editing and so forth, I'm also a PR photographer.
A decent living can be made as a Wedding Photographer, but doing something which requires a different mind-set helps keep me fresh and not bored.

I've job shadowed photographers, and asked them pretty much the same question. The general answer is either working on a customer's order (editing, having printed, etc) or working on getting more customers. This includes making and sending out comp cards (for a wedding photographer, they would be sent to planners), and just getting your name out.

I am a photo lab manager full time and shoot weddings regularly on the side. (Usually about 10 or 15 a year) I also do children and family portraits and shoot events for a couple of organizations.
